Montreal Road Trip - Sucrerie

BL has been pouring maple syrup on this waffles, pancakes and oatmeal for years. One of the reasons for the Montreal road trip was to show him where this delicacy comes from, and the work it takes to make it. Another was to introduce him to the heart-stopping cuisine of the cabane a sucre - oreilles de criss (deep fried, smoked pork jowls), sausage, crepes, ham, beans, scrambled eggs, and sugar pie. We were joined by his great (in all senses of the word) Aunt Lise and Claude.

BL checks out the old school method of collecting sap.







Then he got into the maple bush to get a look at how they harvest trees these days, through endless lines of sap-sucking tubes running from tree to tree.
